Thompson’s Texas Bar-b-que originated in Lubbock, in the heart of Texas’ Southern Plains. The Thompson family resided in Texas for many years and enjoyed preparing backwoods bar-b-que as a family ritual. While the women folk were stirring up delicious side dishes, the men were in the woods chopping away at the fine hickory wood made especially for grilling and smoking the bar-b-que. Mama Rita enjoyed experimenting with all types of spices used for her secret marinating recipes, which today is known as Thompson’s Marination.


The Thompson family enjoyed eating outdoors so much that, after we moved West to California, we opened our first restaurant establishment in 1971 known as “The Pig Pen Bar-B-Que” in Los Angles California. After many years of operation, our family sold the restaurant. Now, the Thompson family is back in action with the same backwoods flavor and seasonings, preparing tasty meals and a special blend bar-b-que sauce you won’t forget.
